Turkey-Spinich Meatballs

1 pound ground turkey

1/2 cup gluten-free bread crumbs (purchased, or home-made from gf bread)

1 egg

2 cups frozen spinach, thawed and squeezed dry (or use a towel to press dry)

4 green onions, sliced, white and green parts (or 1/2 cup finely diced onion)

1 tablespoon soy sauce

1 tablespoon Worcestershire sauce

1/2 teaspoon salt

1/2 teaspoon garlic powder

Mix all ingredients. Form into 30 meatballs and place on baking sheet. Bake at 350 degrees for 20 minutes, or until no longer pink in the middle.

Serve with marinara sauce over spaghetti, or use with a sweet and sour sauce over rice. Makes 30 meatballs.
